Pistachio and Shallot Persian Spiced Rice

Fresh, herbaceous and aromatic, it’s our take on Sabzi Polo — a vibrant Persian-style herb rice reimagined for simple, everyday cooking.
Enjoy as a gourmet side or the base for a light, flavourful meal. Perfect alongside fish, chicken or seasonal vegetables, finished with yoghurt, a squeeze of lemon and a sprinkle of fresh herbs.
Serves four as a side dish or two as a main.
Combine pack ingredients with 3 cups of water (or vegetable stock for extra flavour) and 1/2 tsp salt (optional). Bring to the boil uncovered. Reduce heat, cover and simmer for 10 minutes until rice is tender and the liquid absorbed. Remove from heat and rest for 5 minutes. Finish with a knob of butter, squeeze of lemon and some lemon zest stirred through before serving. Ready in 15 minutes.
